7.) Quinoa, Corn and Mint Side

​ Prep: 10 minutes

​ Total: 40 minutes

​ Servings: 8 ½ Cups

Ingredients:

Quinoa – 2 Cups

Kosher Salt – To Taste

Fresh Corn Kernels - 6 Ears or 3 Cups

Green Onions (Finely Chopped) - 1 Bunch or 1 Cup

Chopped Fresh Mint – ¾ Cup

Lemon Zest – 1 Tablespoon

Fresh Lemon Juice – ¼ Cup

Extra-Virgin Olive Oil – ¼ Cup

Freshly Ground Pepper – ½ Teaspoon

Steps:

1.) Rinse quinoa in large sieve under cold running water. Cook quinoa in 4 cups boiling water with 2 teaspoons kosher salt 10 to 15 minutes or until almost tender. Drain; spread onto a large sheet pan, and cool 15 minutes.

2.) Combine quinoa and remaining ingredients; mix well. Season with kosher salt.
